When Andrea says that wines explain and tell the story of the area in the form of sensations, he also adds that the oenologist mustn’t ruin what nature offers him and so we present Filippo Giannone as the one who offers nature in his hands. Filippo deals with vines for the production of grapes for wine about which he writes in  specialized books and magazines.  He is one of the major experts in this field in Italy. His language, as his work, is technical and scientific.  He is the expert and also and above all a ‘countryman’ : an agronomist full of knowledge and passion for the vines (but also an entomologist with a passion for insects which he collects and catalogues). He’s to be seen walking alone in silence between the plants which he observes one by one as if to question them. Andrea who has chosen him as his close collaborator and knows him well says that Filippo “breathes the vines” and that to produce a wine it is crucial to start from this breath.
